I loved seeing you win the maltesers at the Infant Summer Fair chocolate tombola. Your smiles of delight will be forever imprinted in my mind. I appreciate that you were a little bit cross absolutely livid with Mummy and Daddy for munching all of them greedily but they were too tempting in the larder at 9pm whilist watching Red 2 ( great film if you love Helen Mirren) . I fully understand how you felt wronged and will never steal your maltesers again. Please accept this maltesers cake as an apology…

250g unsalted butter
100g light brown sugar
150g caster sugar
250 g self raising flour
4 large eggs
1 tsp baking powder
1 tsp vanilla extract
2 tbl milk
100g maltesers ( more or less!)
20 cm X 30 cm baking tin , lined.
Preheat the oven to 180 centigrade
Cream butter and sugar.
Add eggs one at a time, beating until incorporated.
Mix in milk, vanilla and baking powder
Fold in sifter flour until incorporated
Spoon half the mixture into the lined tin .
Dot with 3/4 maltesers
Cover and smooth over with remaining mix.
Dot with remaining maltesers
Bake at 180c for 20 – 25 minutes until golden brown and a knife comes out cleanly.
( it’s even better if covered with milk chocolate and maltesers before slicing! )
